Overnight oats

Ingredients

  • 150g porridge oats
  • 1 chopped apple
  • 1 grated carrot
  • 150ml almond milk (or any other type of milk)
  • 50ml apple juice
  • 60g blueberries
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp turmeric
  • 2 handfuls of mixed nuts
  • 1 handful of coconut flakes
  • 3 tablespoons of coconut yoghurt

Directions

  1. Mix all the ingredients together
  2. Leave to soak overnight in the fridge
  3. Add some extra fresh berries or fruit in the morning along with a tablespoon of pumpkin seeds and enjoy for breakfast
  4. This will keep in the fridge for several days
