
Minestrone soup
Preparation time: 15 minutes
Cooking time: 25 minutes
Serves – 4
Ingredients
- 1 courgette sliced
- 2 tbsp olive oil
- 2 garlic cloves crushed
- 1 red onion finely chopped
- 2 carrots chopped
- 2 celery sticks chopped
- 100g green beans, sliced
- 1 tin of chopped tomatoes
- 1 tbsp tomato puree
- 1 tin of cannellini beans, drained
- 500ml vegetable stock
- 100g wholewheat or brown rice spaghetti broken into 2cm strips
- 2 tsp basil
- 2 tsp parsley
- Salt and pepper to season
Directions
- Add oil to pan and soften onion and garlic.
- Add carrots, courgette, green beans and celery and soften.
- Add 500ml vegetable stock, tomatoes, beans, tomato puree, basil and spaghetti.
- Simmer for 25 minutes, then add the parsley and salt and pepper to season. Enjoy!
