Minestrone soup


Preparation time: 15 minutes

Cooking time: 25 minutes

Serves – 4


Ingredients

  • 1 courgette sliced
  • 2 tbsp olive oil
  • 2 garlic cloves crushed
  • 1 red onion finely chopped
  • 2 carrots chopped
  • 2 celery sticks chopped
  • 100g green beans, sliced
  • 1 tin of chopped tomatoes
  • 1 tbsp tomato puree
  • 1 tin of cannellini beans, drained
  • 500ml vegetable stock
  • 100g wholewheat or brown rice spaghetti broken into 2cm strips
  • 2 tsp basil
  • 2 tsp parsley
  • Salt and pepper to season

Directions

  • Add oil to pan and soften onion and garlic.
  • Add carrots, courgette, green beans and celery and soften.
  • Add 500ml vegetable stock, tomatoes, beans, tomato puree, basil and spaghetti.
  • Simmer for 25 minutes, then add the parsley and salt and pepper to season. Enjoy!
