Shepherds pie with extra vegetables

Cook time: 25 minutes

Serves: 4

Preparation: 20 minutes


  • 500g organic lamb mince
  • 1 large onion
  • 3 carrots
  • 2 celery sticks
  • 200g button mushrooms
  • 2 tsp mixed herbs
  • 2 cloves garlic, crushed
  • 2 tbsp tomato puree
  • ¼ pint beef stock
  • 2 large white potatoes
  • 2 large sweet potatoes


  1. Steam the potatoes.

2. Brown the mince in a pan and drain off the excess fat.

3. Add in the chopped onion, carrots, celery, mushrooms and garlic and stir until softened.

4. Add in the beef stock, herbs and tomato puree. Simmer on a high heat for 5 minutes.

5. Transfer the meat and vegetable mix to an oven proof dish.

6. Mash the potatoes and use to top the meat and vegetable mix.

7. Put in the oven on 180C for 25 minutes.

Serve with green vegetables.
